Café-Style White Sauce Pasta You Can Make at Home in Minutes

Some recipes instantly make you feel at home, and white sauce pasta is definitely one of them. It's warm, creamy, comforting, and perfect for those days when you're craving something indulgent without spending hours in the kitchen. While many recipes ask you to prepare a separate white sauce with flour, this version is much simpler and just as delicious. The secret? Letting the pasta cook directly in milk until it becomes soft and the milk naturally reduces into a rich, creamy base. No draining, no extra hassle—just one comforting bowl of goodness.  Whether you're making a quick weekday lunch, a cozy dinner, or a special meal for your loved ones, this recipe is guaranteed to become a favorite. 

Ingredients: 

250 grams pasta (penne or fusilli) 

500 ml milk 

½ cup water 

2 tablespoons butter 

1 teaspoon ghee 

4 cheese slices 

½ cup mushrooms, sliced 

½ cup broccoli florets 

¼ cup sweet corn 

½ cup capsicum, diced 

1 teaspoon oregano 

Salt to taste 

Freshly ground black pepper to taste 

Step 1: Cook the Pasta 

Pour 500 ml milk and ½ cup water into a deep pan. Add the pasta and cook it over a medium flame, stirring occasionally to prevent the milk from sticking to the bottom. Unlike traditional pasta recipes, do not drain the milk. Allow the pasta to cook until it becomes soft while the milk naturally reduces. By the time the pasta is perfectly cooked, most of the milk will have been absorbed, leaving the pasta beautifully creamy and full of flavor. 

Step 2: Sauté the Vegetables 

Meanwhile, chop mushrooms, broccoli, sweet corn, and capsicum into bite-sized pieces. Heat butter and ghee in a pan. Add the vegetables and sauté them until they are tender yet slightly crisp. This gives the pasta plenty of color, texture, and freshness. 

Step 3: Prepare the Creamy Cheese Sauce 

In another pan, melt a little butter. Add a splash of milk, followed by 4 cheese slices. Stir continuously until the cheese melts into a smooth, creamy sauce. Season with oregano, salt, and freshly ground black pepper, then add the sautéed vegetables. Mix everything well and let the sauce simmer for a minute. 

Step 4: Combine Everything 

Add the milk-cooked pasta to the cheese sauce and gently toss until every piece is coated in the creamy mixture. Cook for another minute on low heat before serving.  Serve hot with a sprinkle of oregano, black pepper, and, if you like, a little extra cheese for the ultimate comfort meal.
